Food in Nigeria: It's famous as one of the best suya's in Nigeria - but what makes it taste so good?!
"The taste - we are different from other types of Suya," says Mr Salisu, who has cooked and sold the barbecued meat at Lagos's famous "University of Suya" at Allen Avenue, Ikeja. "We add ginger, groundnut, pepper, maggi, salt - to make it more sweet!"
But the secret ingredient? Pepper! - but you have to check out the video to see how they use the pepper to get that "don chop belly full" taste!
Food in Nigeria: Nigeria's University of Suya! - check out the secret ingredient:
Suya is strips of barbecued meat - a selection of beef, shaki/tripe, kidney or liver - which tastes best when slow-cooked over charcoal from a roadside, Lagos joint!
And Suya is never complete without onions, pepper, tomatoes and - finally wrapped in old fax or newspaper! Oh, and don't forget your toothpick!
"We have the first one we use to rub the suya (raw) before we put it on fire, then secondly we have the one when we cut the suya (cooked) - we'll just spray it on top of the suya for you," says Mr Salisu.
And business is good:
Both rich and poor patronise the University of Suya - but particularly in the evening when people are going home from work, as well as the weekends.
"You can call it a good business because this is the only business i know, starting from my place until I came to Lagos" says Mr Salisu who has been selling at the University of Suya for 20 years.
And unlike other small businesses in Lagos, who get disturbed by the police or LASTMA, for Mr Salisu it is different. "We don't have any problem with police, we have our own security."
We even caught up with another Suya seller who buys from the 'University' to sell in the market:
"Meat e dey inside, pepper e dey, onions and charcole e dey, tomatoes e dey inside nylon" Said Mr Umar, he transports all these things with his bicycle since the ban of okada when his okada was seized.
"Police go catch me everyday, i go tell them na suya i dey sell, no be okada, he no go gree, they collect N10,000, N20,000, they don carry my okada go Alausa"
Maybe they were hungry and just after the Suya...?!
